Recently decided to buy a pretty significant Sony set up to try it again after trying the Sony cameras about a decade ago when the AF was atrocious. Needless to say Sony has fixed that issue and then some, but I've noticed a fair amount of my shots overexposing. Mind you, easy enough to compensate via dialing down exposure/shooitng full manual.
Is this a system known quirk/anything I should look out for? This is across lenses, across setting, ie aperture priority/shutter etc.
I agree, don't know Sony terminology yet but have tried both of the metering modes that are averaging the entire scene. This was the first thing I checked when I noticed the exposure.

What metering mode are you using? Seems like this logical place to start if overexposing-
My older A7R4 doesn't always get it right either, but I think with the tech in the A7R6 this should be mostly corrected? Maybe there's a setting off on your end?
Looks like you have an outstanding kit. All of those lenses hold up to the 67mp sensor.
I use multi metering and it's usually spot on unless there's a bright light source or large block of shadows in the composition. I do have my finder set to emulate exposure and color, so I can "get a hint" if a capture might need a + or - EV. I normally shoot in A mode and have my rear command wheel set to EV.
All that said, my guess is your over exposure issue is being caused by the DR optimizer, under Exposure> #6> 1st menu item -- TURN THAT OFF and I suspect you'll see immediate improvement.
I just completed a two week vacation and first use of this same camera. I used the multi mode metering and aperture priority with the histogram displayed in the view Finder and then would use exposure compensation to make sure that I have the exposure, correct. all of the images were nicely exposed.
The post above probably identifies your main problem.
I have not noticed any particular overexposure with my a7rVI. Of course in contrasty light you sometimes need to dial it back as with most all cameras.
The a7rVI has adjustable zebra thresholds so you can tweak those to see what is going to overexpose. What are they set to and is it overexposing before they are displaying?
