For manual focus I like the Ai-S 28mm f2.8, 50mm f1.4 and 105mm f2.5.
But for travel specifically I often exchange the 105mm with the Voigtländer 90mm f2.8, because the latter is much smaller and lighter.
I’d also suggest looking into AF-D lenses. The 50mm f1.4 is the same optical formula as the Ai-S and quite good from about f2. The 35mm f2 is also really nice.
And don’t sleep on the zooms: My AF-D 28-70mm f3.5-4.5 is almost as sharp as the Z-mount 24-70mm f4 when it’s stopped down and it has much nicer sunstars. And the 28-105mm f3.5-4.5 is not bad either.
