I have over a dozen Canon bodies, but it's not clear what you are asking exactly. Canon JPEGs in the MILs era are pretty good compared to the older ones.
I was inviting ideas or speculation about leaving EOS R100, PowerShot V1, etc in JPEG mode. This would be an alternative to using a camera incapable of shooting RAW, such as X half. While X half only records JPEG, I don't know if that fact implies JPEG results will be different or better from X half in particular or Fujifilm in general. While other brands and their communities do not emphasize JPEG as strongly, are their cameras any less capable?
I shot RAW back in the age of Aperture and frankly, I don't intend to go back.
Mirrorless interchangeable lens system. I've noticed that the 2020 cameras and later do pretty well, but not like what you get from DXO, C1, Adode, even DPP. I can't speak to the low grade bodies, but I try to avoid the small, noisy sensors.
I would expect Fuji to be better at aps-c than Canon, since Canon views aps-c as lower grade.
Ultimately there is only so much processor power and the designers have to decide how much of that works on the JPEGs. Denosing, lens computational corrections, AF, compression, etc. All have to be done at speed.
