p.1 #2 · Over-Processed JPEGs from the A7R V – Is It Just Me?
Since things like “over-processed” and “excessive sharpness” can be pretty subjective, I wonder if you could share some examples of photographs that produce these concerns.

Maybe better to shoot in RAW?
tsdevine gave you a good link to the help guide page describing the "Creative look" options and how to adjust them if needed.
Didn't that help?

Yes, shooting raw is always "better" in my opinion. When shooting raw you have to handle the raw material yourself using a raw converter and there you adjust white balance, exposure, color balance, shadows, highlights and so on until satisfied. Are you prepared to do that, process you images?

Do you find the JPEGs from the A7R V too sharp? For example, the in-camera JPEGs often look over-processed, with excessive sharpness.
What’s the best workaround for this?
What are your creative settings at? These settings can really affect the jpeg results.

Why did you buy a high-end A7RV in the first place? What do you want to do with it you couldn't do with an entry level camera?

Creative look is great like TS recc, and if you want more control you can customize a picture profile. These are super helpful for knocking out fast previews even without the LUT previews.

Are you processing in Adobe Lightroom Classic? They always oversharpen the images, so move the sharpening slider left (all the way?) is a good start.
Without any intervention, the sharpness control is set to 40. What are your personal default settings in LR?
Frankly, I get the impression that the majority of people posting pictures here tend to set the sharpness control higher than 40, not lower.
