Just picked up this camera a few days ago and noticed that when putting my eye up to the viewfinder there is a rather long delay, maybe 3-4seconds, before the viewfinder switches on. The LCD screen turns off instantly, but the viewfinder is lagging behind. This only seems to happen about 50% of the time, but it has already cost me a few shots this past weekend at a soccer tournament.
I'm using firmware v3.00, which I believe is the most recent. Wondering if anyone else is running into this issue as well.

Maybe try taking a swab dipped in isopropyl alcohol and cleaning the sensor under the EVF. I had this issue on an A7R4 and cleaning the little sensor thingy fixed it. I'm guessing some skin oils were causing the issue.

That actually did cross my mind briefly, but I dismissed it because I assumed it would be a single sensor that turns off the LCD screen and turns on the viewfinder...and the LCD screen turns on/off appropriately. It's easy enough to clean, so I'll give a shot anyways.

Yep, same here. Even a single large speck of dust causes that sensor to misbehave. In my case a rocket blower fixed the problem.
