Chickory. has lovely little blue to violet flowers that insists on growing through the cracks in my driveway. When you cut it - it begins to fade immediately, and within a few hours the petals are white, and shriveled.

As a Boy Scout, I learned that chicory can be eatin, pickled and can make a slight distasteful coffee. But when in "survival mode" anything that won't kill you tastes great! Young chicory leaves can be added into salads. The flower buds can be pickled.

Thanks Dan. I knew about the coffee substitute thing, but didn't know it had so many other uses.
