You can choose almost any point of sensor to be the point, and then several types of expansion of that point. Also you can choose the whole sensor to be the AF array. This is nice in case you're shooting e.g. planes or Moon in the sky without clouds.

You can also limit the full AF area to a belt, horizontal or vertical, positioned anywhere on the sensor, or a smaller square or rectangle. There's quite a lot.

Both my R6II and 57 offer Eye Detect in all AF modes. My R5 only offered Eye Detect in Whole Area AF so I doubt the R6 has that. This comes with more Detail Set mapping options.

Something the R6II has I wish the R7 had. The ability to map Subject to Detect to a button. Since I shoot wildlife most of the time with the R7 it's not so bad but I really like it on my R6II.

I suggest you read some of the many articles on focus stacking. The distance between each shot is determined by what settings the photographer makes in the camera. Usually a single focus point or small group works best.

I have no idea what you are asking about what focus points are in a mirrorless camera. Seem the same to me as those in DSLR's.
