Note that Canon has renamed this to "Preview AF" starting with the R7. So the R7, R10, R6II, R50 and R8 won't show 'Continious AF' in the menus anymore. That entry has been replaced with 'Preview AF'.
It's still the exact same thing, only using a different name.
I thought it was called Initial AF, page 5 of the purple menus of the R5. I always used it and I used it now (Preview AF) use it on my R7 and R6II.

I have "Preview AF" as an option on the 3rd Purple menu on my R3. It is currently disabled
I like Preview AF. It starts to look for an eye when the camera wakes up. Since I left the shutter at the factory setting of AF and Metering even if I lift the shutter higher than half way (which is rare) the prefocus square kicks in and continues to AF.
Just to add to the Mode part. I spent a few shoots using Mode 3 only for birding just to see and as far as I was concerned it worked as advertised. It looks kinda weird the VF because it is not stabilised but my files looked just fine when I viewed them on the computer.
I shot photos of the International Space Station using Mode 1 IS. Obviously, I was panning the iS. The resulting shots showed sharp images of the stars with a blurred ISS. Did the IS work? Sure it did, but it wasn't what was intended. Would mode 2 have been better in this situation? Probably only if the axis of the camera was parallel to the iSS. Maybe the next time I shoot the ISS, I'll try Mode 3, but I'll bet using no IS will be better since the camera will almost certainly be rotating relative to the pan direction unless I set up a tripod to align with the predicted ISS path.
