With the weather starting to transform into spring I was inspired to make a pasta salad that is a regular at summer gatherings in my neck of the woods. The ingredients include pasta (duh), mini sweet red and orange peppers, black olives, fresh mozzarella, diced red onion, sliced cherry tomatoes, pepperoni, fresh broccoli and it is typically dressed with a zesty Italian dressing. This time I decided to try something a little different and used a red wine vinaigrette dressing. OH MY!!! I think I've found my new favorite dressing for this salad!
Well member "Jeffrey" sent me colored carrots last summer. I photographed them and posted them here then ate them!!!!!
They were delicious!!
I hope he can do t again this year!
