I also shop from most of the online retailers the other Chris listed... i have used powerinnumbers (X Drives!!), dd photographics (70-300 IS) and dirtcheap (good service, nearly bought a 20D from them)... yeah, all pretty good
But if I have to pay a serious amount of $$ for gear, I will shop from US (BnH or Adorama) or Hongkong... sorry Aussies

Bring a tripod if you are going to do waterfalls , otherwise shoot everything wide open, with IS and ISO 3200 hahahah!! I wouldnt bring a tripod with me to anywhere if I don't have to ... hehe
