Looking at tele options for the Z7ii. How does the 500 handle nowadays with the latest firmware? Was watching an older video where it was fairly slow on the Z7 but I'm wondering how fast or slow the focus is on the Z7ii? Weighing this against other 500's like the Sigma 500 f/4 and the considerably more expensive Nikon 500 f/4e

I've never found the 500 PF to be "fairly slow" on my Z7 or now on my Z7II. It has always worked pretty much as fast on the Z7/Z7II as it did n my D850. These things depend on the light and with normal light levels, I've never had issue with the focus speed and never found it "wanting". The 500 PF can "hang up", but it can also "hang up" on the D850. Tweak the focus ring and away you go again. Even in low light, the Z7/Z7II is able to grab focus as in this very low light shot - it was able to focus on this bird which was flitting about when my friend's Canon R5 + 300 f2.8L lens would not! I nailed 3 shots, he got nothing.
Nikon Z7II + 500mm f/5.6E PF ED VR, 1/250s f/5.6 at 500.0mm iso6400. As you can see, quite low light!
Made a move to Tucson... in the house a week. This guy/gal landed in the tree in front of the house. We've had two coyotes come through the yard and about an hour ago... a full grown bobcat. I didn't get the best of shots... it was walking away. Pretty amazing none the less.
It looks like I have several hawks nesting or hanging out in my neighborhood. The 1st couple of images, the hawk landed on my gate column and just let me snap some shots. The rest are behind the house, they were calling out a lot. One sounded like a crow that smoked 2 packs a day for 20 years the others had screeching sounds.
