I have purchased numerous bodies from Canon refurbs, and with a 1 year warranty and a 2-3 week return policy from purchase, it has always been a good deal for me. Only 1 out of 5 or so had a shutter count greater than 1000.
They have a $1200 6D in stock, and a 5D3 for $2100.

One other comment about buying refurbished gear. Canon offers 10 or 15 percent discounts on most of their refurbished gear a few times per year. So that $2100 price for a refurbished 5D Mark III is at the high end. The next time they do a 10% off deal, the same model will be available for $1900.

The 5D3 is a fantastic dslr. It is capable of handling almost anything with ease, weddings and 'newborns' are just the sort of things it does well.
The high ISO performance is about a stop behind the 6D after 1600 ISO but the body more than makes up for it plus if you are shooting professionally you have in-camera backup.
If you don't need giant enlargements 20 meg is plenty

I've been shooting with 5d3 since they were introduced. Now also have Sony A7r2. In between I picked up the Nikon D800E and had it for a few years. When the Sony A7R came out I got rid of the Nikon and stuck with Canon and Sony, (as the Sony can use all my Canon lenses). Nikons are very good and the sensors are excellent but for what you are shooting, I think sticking with Canon may be your best choice. I would go for the 5D4 in your case.
I don't see the need for a 5DS shooting people. The Nikon and Sony switch for me was only for architectural and landscapes, (which is half my work). I still use my Canon 5D3's for lifestyle shoots, and plan on moving to the 5D4 soon. I don't think the extra resolution of the Nikon or 5DS, is necessary for people and I like the handling and AF on the Canon better. I shoot with my 5D3 up to 800ISO and with a bit of noise reduction, they look superb. I assume the 5D4 is even better. I suggest you rent a 5D4 and give it a try, I think you'll find it to your liking.

I print 30x40" regularly from my 5D2 and 3 and they look fine. Don't let the math confuse you. Forget the old 300dpi rule from the offset printing days. 20 megabytes will print just fine in almost any practical size depending on the subject matter. Architecture may start to show detail loss but people, faces, landscapes, animals etc. do just fine blown up larger than you expect. I have 30x40's from the original 5d (12MP), that look excellent from a normal viewing distance. When inkjet printing, you can go down to 150-100 PPI and feel comfortable they will look fine. I have walls full of them and have sold dozens.

I shot a birthday party a couple of weeks ago ... the adult kind and was running @ ISO 5000 on a 5DmkIII and 5dmkIV.
Both cameras had on camera flash.
The images a good.
I can post when I get finished editing.
Place was odd shaped and no option for OCF.
For the OP, we are talking weddings here..... normal ISO range is below 1000 during the day. 1600-4000 in churches and 2500-3200 at receptions with OCF.
If you know what you are doing ..... 5000-8000. Better to have a shot than nothing at all. This is doable on a 5DmkIII.

5d4 is better at high iso dynamic range than d810 [ go to measurements - dynamic range - print]
d810 is better at low iso dynamic range than 5d4
5d3 is about 2/3 stop worse at high iso and 2 stops worse than d810 at iso100
if you are just buying for iso100, the d810 is better by a stop or so
Eg. There is not a lot of difference between them at above iso400

Probably why she's even considering Nikon - with their high failure rate and extremely slow service, one needs a lot more backup gear than if using a comparable Canon outfit (in my experience, anyway; YMMV).
If you're only shooting for personal enjoyment, the Nikon D810 is a great camera.

Different cameras or even different systems are capable of creating different images. But the main question is: what can *you* create with each of them and does brand or model really make such a difference in your final images?
I'm not going to list performance differences but I know a friend shoots a D810 and Nikon lenses while I use Canon. We both get plenty good results from our gear.
Think about the following: yes the one camera make and model does perform better than the other in specific areas but usually by only a small amount that normal use will likely never make a decisive difference.
Especially in cases like these, my advice is to rent the "other" brand for at least an entire day and shoot a real enough assignment. Chances are that you will find unexpected pros and cons for each but mostly not the sensor.
Finally: looking at jasmine star and Jeff ascough wedding images (both use Canon and most semi recent stuff is with 5D3) you will soon acknowledge it's more about experience than about technical gear capability.

I guess I'm spoiled living 20 minutes from Canon Newport News. They greet me with a big smile, offer me coffee, and I can fill out the repair form on their comfy couch. Then they ship everything back to me for free.
