I know what you mean regarding "difficult to process". Just had the same trouble with a series of marine sunset pictures from Mexico.
Here is what I figured: when I try to calm down highlights in ACR by moving "highlights" slider on a main tab, I end up with over-saturated yellow.
If I do it by "highlights" slider on tone curves tab, it does not affect saturation. Maybe there is an explanation to it (for example, Adobe uses different algorithms in one vs another) but so far this just my observation.

I don't know whether either or both of you use Nik Viveza or Color Efx Pro but I had the same problem in ACR. But when I edited them in V2 or CEfx Pro, the oversaturated yellows disappeared.
