I recently acquired an 810 and D500 and haven't had much time to try them. I'm still trying to familiarize myself with the layout after using my D7100 for some years. I am really loving this 810 and it will be my new all-rounder. Walked out in the yard and took a snapshot of the kid's dog and processed it a little over the top.

If you can afford the D810, do yourself a huge favor and get it... I use it for everything from landscape to bird photography, and now for natural light candid portrait work with the family and especially our sweet little Abigail.
The dynamic range and resolution/detail with good glass is incredible. I love this camera.
I know the new D500 is a fine camera for action shots and I'd love to have its AF capability but the D810 is still the best DSLR for me.
Here's a couple of recent captures downsized to 1600 pix for all you poor sods that don't have a 4k/5k monitors but if you have a high resolution display and like eye candy head on over to my flickr gallery and download the full rez versions.
These threads are great but making it so hard to choose between D500 or D810 as my next upgrade , the AF of the D500 sounds fantastic but if I'm being honest IMO the D810 images I've seen just look WOW !
