Go everywhere: 5D2, 100 macro, 50 1.8, 28 2.8 all in LowePro TLZ-1.

For walkaround, put it on a belt with a 100-400 in it's official case also on the belt, balances nicely.

I'm used to caryy a 2 lens kit.

If forced I take the 5D3+50mm 1.4 and do some photo merging when needed. But feeling very tempted with the new Sigma 35mm.

I have a 5D, 24mm f/2.8, 50mm f/1.4, 100mm f/2.8 Macro USM and 300mm f/4L IS. All Canon. It's not a fancy setup, but it does the trick.

Minimalist kit:
Olympus OM-D + Pany 20f1.7 & Oly 45f1.8

This was my old kit, I swapped out the Pany 20 for a Pany 12-35 2.8

my most minimalist kit, one that's always on me and ready to shoot? A cellphone camera

Otherwise for recreational shooting I tend to only take a 5D3 and 24-70 or 16-35. Occasionally I'll sneak in a 70-200, but its size is usually a disincentive.

Family gatherings, day trips into the city, etc...
5D2 & Sigma 24-70mm f/2.8 EX DG

Birding along bike path, short birding jaunts...
7D & Sigma 120-300mm f/2.8 OS & 1.4x & 2x TC

Hiking, birding afield...
7D or 5D2 & Sigma 300-800mm & Tripod w/ Gimbal head with the 24-70 in the sling bag should I need something wider.

5DIII
Pentax 17/4 Fisheye
Canon 28/1.8
Canon 50/1.4
Canon 100/2

Small, fast, and none of this zoom nonsense.

My kit is as minimalist as I can fit in my bag.

I sport the crumpler c-list celebrity medium, so that is a fair size of kit I can carry.

My daily carry is;
5DMkIII with 85mm 1.8 attached
16-35 F/2.8L
24-105 F/4L
430EXII Flash
Wireless flash trigger
Charger
USB cable
Laptop
iPad
Tripod

There are various other bits, but I like having all of my gear handy so that should I decide that after work I am just going to drive away for a couple of days over the weekend, I don't have to stop home.

I also tend to keep a duffle of clothes in the car for that exact reason.

If I was told I can only have one lens, it would be the 24-70 II with my 5D3.

18-135, 180 Tam+Tc

Could sub 18-55 for 18-135. I shot maybe 90% with 18-55 II and 180+tc for quite a while.

Add 11-16 and I'm in really great shape.

Ran around with 11-16 and 28-80 tam on 40d a bit.

Surprised how much I could do with old alt 28-70 on 5d. Add 70-210 and 21 om and ur in good shape.

I often travel with the full frame (5d3) and 24-105, and a fast prime (sigma 50 1.4, or 35 1.4L)
even more minimalistic, when size is an issue, I take my Nex 5N, 18-55 IS, and 50 1.8 IS.

Mine:
Perfect for travelling.

6D

16-35mm used for

16mm typically for landscape, narrow street, interior
35mm for street, food, 'vacation' portrait

50mm used for
any thing that the previous lens cannot reach
low light

I enjoyed it A LOT

I shot weddings for years with a 16-35L II, 50mm 1.4 and 85mm 1.8 on a couple of 5Dc's. I'm now out of weddings and pretty much living with my 5D3 and 50L that I carry everywhere.

I'm in the same boat and am thinking of either going with a D5100 and 35/1.8 or an x100s. I love my D700 and 35/2, but want something smaller and lighter that I'm not as afraid of dropping.

So this thread has come back to life. I'm still looking at the SL1 to extend the reach of the G1X - still my vote for minimalist minimalist. Just back from my Bhutan/Nepal trip. My vote for a travel kit 5D3, 24-105, 100-400, 1.4x, 20mm extension tube, and 270 EX flash. 1.4x goes in your check luggage since no moving parts. 100-400 is a beast but it weighs 1 oz more than the 17-40, 70-200 lenses I took and is much more useful. A number of bird shots I missed because I only had 200. Add more if you need but this will get you covered. My .02!

For me while traveling or with family

5D not vertical grip
24-105
14 if I will shooting indoors
70-300 L if I need reach
Flash (420 or 580/600)

I guess that is not very minimal
