Otherwise for recreational shooting I tend to only take a 5D3 and 24-70 or 16-35. Occasionally I'll sneak in a 70-200, but its size is usually a disincentive.
I sport the crumpler c-list celebrity medium, so that is a fair size of kit I can carry.
My daily carry is;

16-35 F/2.8L
24-105 F/4L
430EXII Flash
Wireless flash trigger
Charger
USB cable
Laptop
iPad
Tripod
There are various other bits, but I like having all of my gear handy so that should I decide that after work I am just going to drive away for a couple of days over the weekend, I don't have to stop home.
I also tend to keep a duffle of clothes in the car for that exact reason.
I often travel with the full frame (5d3) and 24-105, and a fast prime (sigma 50 1.4, or 35 1.4L)
even more minimalistic, when size is an issue, I take my Nex 5N, 18-55 IS, and 50 1.8 IS.

I'm in the same boat and am thinking of either going with a D5100 and 35/1.8 or an x100s. I love my D700 and 35/2, but want something smaller and lighter that I'm not as afraid of dropping.
So this thread has come back to life. I'm still looking at the SL1 to extend the reach of the G1X - still my vote for minimalist minimalist. Just back from my Bhutan/Nepal trip. My vote for a travel kit 5D3, 24-105, 100-400, 1.4x, 20mm extension tube, and 270 EX flash. 1.4x goes in your check luggage since no moving parts. 100-400 is a beast but it weighs 1 oz more than the 17-40, 70-200 lenses I took and is much more useful. A number of bird shots I missed because I only had 200. Add more if you need but this will get you covered. My .02!
