Yeah, you're kinda out of luck if you shoot jpeg, but, this leads to a larger point. As a raw only shooter with all of my cameras, I always set jpeg settings to the most neutral setting with contrast and saturation lowered, because, since all of our digital cameras use the jpeg as a guide for the histogram, using these settings gives a jpeg histogram that is at least a little closer to the raw file. If you're a raw only shooter, I'd recommend similar settings no matter which camera you use (and you can get into uniWB, too, if you want to take it further.)

Granted, as FlyPenFly said, the NEX-7 should just have separate EVF and LCD adjustment controls, so that jpeg shooters can get in on the fun, and so adjustment is obvious for new users.
