As a second I've always been paid the day of the event - either at start or end. That's how I pay my seconds as well. It's in the contract.
If I'm second shooting for you and you want the cards at the end of the night, no problem, give me cards to shoot with and then burn disks with my RAWs on them and mail them to me the next week. Otherwise I will upload the files to your computer or drive following the event, or get them into the mail to you the next day or two. Again, this will all be specified in the contract.

If the primary provides cards for you to second to shoot with, and takes then at the end of the night, then it is highly unlikely that you will ever get those images - there is no incentive for the primary to burn discs (or other means) and send them to the second. Some primaries provide cards to the second as a way of controlling the images - in some cases not allowing any use at all.
Separately, as a second I would prefer not to use someone else's in my camera's - once the primary provided 2gb and 4gb cards to shoot with - on a 5D mk II it was like using rolls of 36!
