Despite a bag full of gear, I usually shoot most of the day with a 5D2, 35L and 70-200. Used to be the 135L, but since I dropped it it's not up to its usually snuff.

First year of weddings, Canon EOS 50 (elan II) with 28-70 f2.8 (sigma) and two Sigma 500 flashguns. After a successful year I could add a 2nd EOS 50 to allow me one body for NPS and another for NPH, heaven!

D700 + 35G, but i had lot of light and backups. i would never go with just one body and/or lens

In December I used 35mm and 85mm for 95% of the images in the final set. The only other lens really used was a SWA. Like others have mentioned, I of course had other backup stuff but this is what I actually used on the day - mainly because it was almost all inside, without a great deal of light. I very much enjoyed that combo though...

Took pictures of my friends wedding vow renewal ceremony on the beach in Aruba with just a 7D, a 15-85 and a 550EX. Probably some of the best shots I have ever taken. Of course a well lit beach with great light and gorgeous colors is not that much of a challenge.

Nikon D70 17-80 (or whatever the kit lens was), SB-600 on a flash bracket, 50mm f1.8 lens. Yeah baby.
