Just got a 50S ll and need to adapt my Canon shift lenses. Priority for me is fit, flare protection and finally AF in that order.
What's the consensus on the 3 listed.

I have both the older TechArt which is not good AF wise to the newer Fringer Pro. Both work fine when used with my Canon TSE lenses. I have 50s and 100s. Lenses wise, 24mm TSE, 50mm TSE and 90mm TSE-II.

I use the Fringer on the 100s and it works awesome....Tamron 45 (bit slower to focus than the other lenses), Sigma 105, Canon 100 macro and Canon 135 f2.
The adapter is not cheap but I am quite happy with it, have no experience with the Kipon or Fotodiox.

Recommend the Fringer EF-GF adapter. I have used the Canon 100-400 Mk2, 300 f/4L, 70-200 f/2.8L Mk2, 135mm f/2L, 100mm f/2.8L macro, 85mm f/1.8, Tamron 45mm f/1.8 on the GFX100S. Some vignette more than others but you can always use at least a center 1x1 crop.

OP is using with TSE lenses where AF speed doesn't matter. Coverage/flair/reflections are more important. Overall I agree Fringer is the best if you need AF.

so far so good. new model viltrox ef-gfx PRO received today,200eur free shipping fom Aliex. Viltrox PRO has same af speed and body quality as return back expensive fringer ef-gfx. new viltrox has usb-c for firmware update,aperture ring,and P/A button as this very nice step for comfy use. whar i remember focus far faster vs my old techart ef-gfx. happy user here,my ef40 full exif,high quality body,speedy fast,sharp and combo lighter and 2x brighter vs my gf50 randomly jpeg photo out of camera

Be aware that the Fringer autofocus performance isn't great with cameras, such as the GFX 50S II, that only have CDAF instead of PDAF. For use with a 50MP GFX camera, I would avoid paying more for an adapter with autofocus vs. a manual only adapter.

Are there electronic adapters without AF? Because it needs to be electronic if the aperture is electronic, and it needs AF if you are gonna focus manually with a lens that has only "focus by wire" (which is the vast majority of all modern AF lenses).

I'm not sure about the quality of other electronic adapters for the GFX series. For X series, I believe Viltrox is a less expensive alternative, and I think they offer something for GFX as well. I have a Fringer that I use with my X series camera, and it works very well with my phase detect cameras, but the autofocus isn't useful with my X-T100, which is contrast detect only.
