It's not only saturation. Contrast too, is too high. Clarity too, maybe? Sometimes, if the conditions aren't right for what you have in mind, then it isn't meant to be. You can try to salvage an image in post, but their is a limit to that. So then you either go back to try again, or work with the conditions you encounter in the field, and prepare try different type of images depending the weather and light.
