I just did a quick test tethering with Tether Tool TetherPro USB cable to A7rIV and macOS Catalina. It works. I sent both RAW&JPEG for the test. Not too bad for a work around. * I tried pairing through Wi-Fi Access Point to macOS Catalina and yes that was too laggy IMO for a fast moving show.
Otherwise: ( although your planned apple store visit might be best)
