How does Canon's DPP software use printer profiles? I have a lab specific profile installed, but I see no difference when I select no profile at all. Do I need to embed the profile in the jpeg? Please advise.

It depends on what mode you are in.

If you are using "File->Print" then the profile used is the one you chose in the "Tools->Preferences->Color management" page.

If you are using "File->Plug-in Printing" you chose the profile in the plug-in.

You may not see a significant difference depending on how good the canned profile is.
