We will be taking a 24-day cruise to the Med this Fall and will be taking my Canon 20D (with 24-105 lens) and our Canon camcorder, so am interested in finding a "secure" backpack that will hold these items, plus water bottles, wallets, etc. for day trips to Athens, Rome, Istanbul, etc. You get the picture...lots of walking around among crowds.
I'm considering buying a Pacsafe product (Roamsafe?) but am not sure if these are really large enough for all of it. I don't want it to scream CAMERA CASE, so have x'd out their larger camera backpacks. (We have a Lowepro that we will bring if need be, but think it might be better to have it look more like a generic backpack.)
Do any of you have any Pacsafe products that you can recommend using? Any other thoughts?

Use what you would normally, just remember to NEVER set it down. You will be fine with your gear during the day; pickpockets are only really good at stealing wallets and unattended bags. Just be smart...

They offer a range of sizes. Nothing will protect you from your own carelessness or from momentary lapses of reason and concentration and (as others said) don't ever put your stuff down or walk away from it for even a moment, but I've seen more than one credible tale of a guy who never felt the razor slit open the bottom of his bag so the thief could slide his gear out gently while they were side-by-side on a crowded train or bus.
