That is suet. It is fat or grease rendered from cooking meat and it's mixed with birdseed and oats. It's usually a sticky solid, but gets soft and liquid like in warmer weather. I keep packages in the freezer for those hot summer days.

For ISO 3200 these party pretty darn good, Herb! No noise to speak of; did you run them through any NR reduction software? One of the main reasons I picked Canon over Nikon is the super-clean high-ISO images which I really need for those far-away, cropped birdies. Thanks for these reassuring examples...
