What does Canon R5 mark ii In-Camera Upscaling mean exactly?
Does it mean that I can crop more for birds photography without effecting image resolution?
Any examples?

Its simply an in camera, JPEG only up-res algorithm. I played with it and wasn't terribly impressed. Its clunky and limiting to use, and I'm not sure its better than Topaz or other good up-res systems. So in effect... yes, you can use it to crop more but I doubt anyone will really use it that way. But your results may vary.

A surprising number of amateur photographers don't own a computer and go straight from camera to iPhone for social media uploading. They also view the Canon Connect app as the most important feature of EOS and go postal over glitches in that buggy afterthought of an app.
