We did 240 weddings last year. Only one couple specified any specific processing desires (her request was minimal flash and minimal contrast).
Do what you want, just be consistent. If you read bride's threads on Reddit, many complain that photographers processing varies too much from what they booked and what was delivered. Don't be trying a new preset every week. Get a look, lock it down, and stick with it.
IMO (I'm 60 years old) if you stick to emulating Fuji 400H film, nobody will be embarassed by that look in 10+ years. It's timeless. Skin tones are natural, greens are green (not that trendy puke brown), and the contrast is right on the money.
If you want to grab a few hero shots and do alternate (trendy) processing, that might be appreciated. Be sure to deliver the first version (matching the rest of the essay) then the alternates as "v2" "v3" an so on. That way, after the trendy look has faded, they have an elegant version for the ages that looks as if it was shot on Fuji 400
