The R7 is a great camera, and it already provides more pixel density than the R5. The technical weakness (slow sensor read out) of the R7 would be probably the main reason to consider an upgrade.
However, I'd consider the R6ii (or even R8) before the R5. They provide still exceptional image quality while offering the same feature set and AF system, while benefiting from the much faster sensor read out.
I shoot smaller, more erratic BIF photography, and while the R5 can absolutely get the shot, the R3-derived AF on the R6ii/R8 is a step up. They also have pre-capture, which the R5 does not.
I love my R5, but if I hadn't bought it at a substantial discount, I would have likely picked up the R6ii.
