have you looked at the actual weight differences in models you are interested in?

what lenses are you using?

which design as there are 3 basic types?
- full balancing system
- side pivot
- modular side pivot attaching to ball head

below is what i use. it is still 6061 Aluminum alloy full balance that weighs in at 2lbs4oz

depending on what you want/need you can save 2 to 8 oz on full gimbal

gimbals using your existing ball head as the base weigh in at the 1.3lb range not including your existing heads weight.

The ProMedia weighs 2.4lb and the Wimberley WH-200 wieghs 3.1lb, but the Winberley has knobs you can loosen with gloves on while the ProMedia looks much too smooth.

The Movo carbon fiber is the best bang for the buck and the knobs work fine in all weather conditions.

How much weight do you need the gimbal to support? What lens? That's the determining factor in choosing the right head.

Check out Flexshooter. While not a true gimbal, it’s what some of the wildlife togs are switching to. They are light for what they can do.

That was a heavily mentioned head when it came out, but I haven't seen anything about it for quite a while.

I had an opportunity to try one of these last year and decided it's not for me. This is definitely a head to try before you buy. My bottom line: It’s a good head, but no better than my FLM or Gitzos as a ball head, and poorer than the Katana as a gimbal. I wouldn't use it with something like a Canon Big White as it doesn't balance well, its movement range is too limited for much of the bird following I do, and it took quite a few turns to lock and didn't feel particularly positive, although it held steady for all but my 500 f/4 lens.

For the price ($600-700 at B&H), I'd have to think really, really hard and try it before getting this instead of a Katana jr. for birds/wildlife, or a FLM/RRS/Gitzo ball for general use.

the knobs on the Katana Jr have a more than reasonable amount of grip with or without gloves. it also has a bit of tension ability which allows, when balanced properly, positioning and will remain in position.

you can see its easy to lift fingerprints off of them too

The only CF gimbal heads I know of are the ones by Zenelli and they sell for more than $1200 and weigh 2 lb. so a 1 lb weight savings.

Another option for many lenses is the Wimberley Sidekick that mounts on a ball head. It weighs 1.3 lb as an addition to a ball head.

A simple google search of "Carbon fiber gimbal head", 5 of the first 6 results are gimbal heads made with Carbon fiber:

I've been extremely happy with the $179 Movo version pictured above. I used it with the 12 lb Canon 600mm v1 lens with no issues.
