It's just the processing. Broadly speaking, you can make any image look either flat or punchy quite easily.
I went from a D850 to a Z9 and if anything my photos are punchier than before because the Z glass is that much better. Image quality between the two cameras is virtually identical.
One thing that might be affecting your perception is if you have your picture control set to Flat or Neutral in order to get an accurate live histogram - if your editing program of choice is applying that profile, then your starting point will indeed look rather flat and lifeless. Every RAW converter looks different as well, and some are much better than others.
As others have said, there are way too many variables to answer this question without examples, knowing the workflow, camera settings, shooting environment, etc. Rest assured it has absolutely nothing to do with the camera or sensor.
