Steve, I do recommend that you get the parents to sign a waiver of some sorts. This will allow you to be protected against any "blowback" if the parents see that their child is a "hit" in sales.
It's for your protection and the children.
Now if you get all of that....I am not sure you can do much else to protect yourself. If someone wants to "steal" your images...they will find a way!
