The R5 is a bit better for SOOC colors, but it's not like the A7IV is unusable or anything like that. The A7IV is very good, the R5 is a stellar. The R5 is also better for judging by looking through the viewfinder what kind of EC is needed.
The R5 feels a bit better for handling, however, the A7IV is fine for me.

The f/1.2 GM is suitable for work around purposes. The 40mm Art isn't, however, I've done it with a peak design capture, and that way it's doable. I have two peak design captures, one at each belt of my bag, so I can also switch from right to left and vv. That's nice with heavy lenses so you can give one shoulder a break using the other one. It's also nice when carrying a kid, so you can change the kid to the other arm without the camera being in the way. And with less heavy lenses you can do two cameras as well. All the complaining about heavy lenses is relatively BS, you just need the right equipment to handle it.
The 50mm GM is a bit more portrait oriented. The 40mm Art is more a lens for things, structures, the lens won't hide any contrast.
I've done my research. I've rented the RF 50mm f/1.2 L. It's heavier than the GM, and it focuses slower than the 40mm Art let alone the GM.
The GM has everything, it's a light weight lens, the focus is blazingly fast, and the rendering is beautiful. It's more affordable than the RF L. It's also a tad wider than 50mm, it's more like 47mm or so, adding to walk around usefulness. You can do sports, walk around stuff and portraits with it. It might sound crazy to shoot action at f/1.2, but the AF is capable enough, and f/1.2 is certainly helping for getting you fast shutter speeds.
The 40mm Art on the R5 focuses very fast and accurate too, but not as otherworldly as the GM on the A7IV. The 40mm Art is the sharpest lens at same apertures, sharper than the RF L and sharper than the GM. I still think it's the sharpest non telephoto lens. All lenses these are sharp enough of course, character is way more important.
If you're worried about SOOC, you might have a look at the A7CII, A7CR or the A7RV. These cameras will do a better job for SOOC compared to the A7IV and other Sony cameras. Canon is ahead of Sony, but it's not like Sony isn't making any progress. You might want to wait for the A7V as the A7RV is quite expensive, and the other ones don't have full mechanical shutter (generally not ideal for f/1.2 lenses).
