Edit: Ah, found that one... the dial on the ON/OFF lever.
You can also press the Q button to quickly go to the next menu category.

A big difference between the R6 and R6II with respect to eye tracking is that with the Mark II you can assign eye detection/tracking to any AF point rather than only the whole frame tracking of the R6. You can either restrict eye tracking to stay only within the selected AF point (seems more relevant for the larger zone options) or let it start within the AF point/area and then continue tracking across the entire frame.
For what you requested, you need to dive into the Customize Buttons menu, select which button(s) you want to assign to AF activation, then while in that menu, press the INFO button to go to the submenu that allows you to customize AF behavior, such as One Shot vs AI Servo, AF point type, subject detection, eye detection, etc.
