Not sure if you can PM other members given your post count, but perhaps @justashooter will see this and offer some suggestions. He's a wire service photographer and should have some insights for current options.
On NFL sidelines I'm seeing quite a few team, league and some wire shooters running ethernet cables from their cameras to 'black boxes' (more like small pouches) they're carrying and presumably uploading images. But I imagine those are going to remote editors for captioning, etc. One guy in Detroit was kind of doing this to transfer to his iPad, from which he then transmitted from the sideline at half time. But I don't remember how he connected the camera to the iPad. It might have be through a battery operated portable router on his own local network. Presumably the higher end cameras have robust built-in ftp capabilities and it could be possible to connect to your device via ftp on such a local network without having to first route through an online server. I guess this is what the camera apps do - create a direct connection between the device and camera. But as you noted, often aren't that robust.
I'm kind of in the same boat as you. Recently I did a shoot that required transmitting some images after an event. But for that I brought my laptop, did the selection and captioning in Photo Mechanic and because my cellular data plan doesn't allow hot spotting, was going to Airdrop from my MacBook Pro to my iPhone and then upload from the iPhone via an ftp app (the client was a news organization with preference for ftp delivery). But there was a coffee shop nearby with wifi so I used that instead. 
Anyway, I'm interested in the responses you receive as it would be good to know what captioning options are available on the iPad or iPhone vs. using a computer. IIRC Photo Mechanic still is not available on iOS...
