Lots of good ideas here!
My experience in the area was shooting commercial real estate and high rises in Los Angeles area was Toyo 45G 4x5 film camera for the "money shots" and Canon 20D and 5D for details and quick turnaround. That morphed into just DSLR, and later to mirrorless. I have the 17TSE, 24 TSE II and 45 TSE, but I'll happily shoot Zeiss ZE lenses on Canon keeping the camera level (or fixing in PP). For the last ten years or so, I shoot mostly Sony mirrorless and Zeiss lenses whenever possible.
As the other Jim indicated, if you keep your camera level you can get by with great primes and zooms for almost all shots. I mainly use the Sony a7R4 with 61MP sensor. But I can get great shots with the Canon R body, and that is probably the most cost effective Canon mirrorless body and has a very good 30MP sensor.
When we put our Simi Valley home up for sale before moving out of CA to WA, I was surprised to see the photographer bring a 5D3 with 16-35/2.8L II, and the shots he took in one hour were pretty amazing especially for the low price he charged! They really turned out well with only available lighting and on-camera bounce flash.
I recommend the Canon R with EF-RF adapter as a great starting point. R5 would be great but even a used body is around $2.5k. My "old" 5DsR is pretty fantastic with 51MP, but mirrorless is so much easier to deal with. Sony a7R4 is a dream and my most used camera. I'll eventually add an R5 when a version II is released and used originals go down below $2k.
Even my old 1Ds3 still takes amazing shots, but much easier to manually focus on mirrorless bodies.
