First order of business is to determine if the budget can handle long glass and depending on brand possibly a suitable body. The converter does work but the AF is not the same as native glass. Believe the fps is also limited. When I first started my migration to Sony from 20+ years with Canon, I tried using a converter with Canon glass. It's limitations quickly became obvious and wasn't going not satisfy my need for action sports, so I rapidly moved to native glass. Definitely a wallet deflating approach
You do seem to be in an awkward position regarding equipment. Can't say that adding a third brand (Nikon 200-500) is the best approach. That leaves either Canon or Sony. From a used lens standpoint there will be significantly more Canon lenses out there than Sony but I personally would not cherish using them attached to an 80D for sports. If going that direction I'd look for a used 1DX (ver 1 or II) body. If looking towards Sony, a used Sony A9II + 100-400 will work. You will be in the higher ISO range for the night games but i suspect the Arkansas field lighting is pretty good. Action shots will clean up nicely. I would however recommend you avoid capturing action that requires heavy cropping. I suppose you could try using that lens with the A6500 but that body's AF is not anywhere close to the A9's capability. Regardless of those two brands, the latest version of the 100-400 most likely will get you through the season. Keep in mind, there is NOTHING that compares to what the 400mm ƒ2.8 can provide.
My transition to Sony was due to how well it out performed the current setup of Canon fast glass + 1DXII. Armed with that experience and looking at your situation, I would sell both 80D's plus one A6500 and pick up a used A9II & 100-400. Use the 70-200 + converter on the other A6500 as the second body and see if you can get through the season. An alternate, sell both A6500s, one 80D and use the remaining 80D + 70-200 as the second body.
