I managed to grab a few shots at Catalina State Park recently:
The first two are infrared shots. I saw these saguaros as they were being lit by the setting sun and I figured IR would really play up the shadows well.

There was also water running through the main wash. I'm assuming it was from snow melt up in the mountains. The flowing water was both novel (for the desert), as well as visually interesting:
