As someone who has just recently (within the last 5 years) found a passion for gardening and wildlife photography, I am beyond envious of your achievements here!
How do you get so close?? And, you say leave your long lenses behind. Do you mind if I ask what lens you shot these with? I'm assuming still a fairly long-ish macro?

I´m a macro guy so my background is all about handholding without any kind of stabilization help...nowadays with mirrorless IBIS we can shoot pretty much everything with macro assistance and very low shutter speeds!
How close? as close as you can get! Will try to make a video tutorial soon for this on my YouTube channel as for the hand held stacking...
Lens? Depends! if you want to get the whole hummer on the composition you will need something wide like 15 to 30mm macro, but if the specimen is really shy the 100mm will do fine at the right distance and closing down as much as you can without entering the difraction zone. With APSC you will get more depth but keep in mind you will be multiplying your focal by 1.6 (canon).
Also keep in mind that with such close apertures you will need tons of light
