My approach for photographing white birds has always been the same. I want to be one click below the flashing highlight warning. When I was shooting Nikon I shot flight in manual exposure and still do this at times using my Fuji gear. Using the fuji gear I also shoot aperture priority with my Sigma 150-600 C wide open at f 6.3, the ISO high enough to get reasonable shutter speeds in this case 400. I let the shutter drift and adjust the exposure compensation which is a dedicate wheel on the Fuji. In this case it was +1 EV with the light from behind. I'd be at about 0 EV the bird were front lit. I adjust by eye as I see my exposures in real time shooting mirrorless.
