I currently shoot with a D500 and am awaiting on a 300pf and a 1.4 TC
Current wildlife lens is a Sigma 150-600 C

I was thinking of getting a D850 or maybe a Z7 but wanted some thoughts on it
Will extra megapixels make a huge difference over the crop factor of the 500?

There is no easy answer to your question. The easy answer would be, it depends . It depends on the lighting conditions, the distance from you to where the action is at, whether it is a fast paced action you are trying to photograph or more perching or semi-stationary target, etc. Just to name a few here, and those factors change rapidly, even within the same location, depending on the time of the day, movement of the targets, among others.

With that said, I am not a Nikon user and I don't know how well the current Nikon lenses work, AF-wise, adapted on their Z-line cameras. At this point, Nikon doesn't have any lenses for their mirrorless cameras for wildlife.... yet. In general, however, mirrorless is the way of the future and DSLRs seem to have seen their better days.

Lines per inch resolved which is a factor of the lens yet can't exceed what the sensor can see.

For any given situation where you are reach limited then the D850 won't provide you a better file than the D500. In fact the D500 file is very slightly better for high-ISO, DR and number of MPs.

If you have to back up to get the subject in the FOV of the D500 then you will get a better image by not backing up and using the D850.

But again, for the same lens, shooting the same subject, at the same distance and your final composition fitting within the D500 FOV, you are never better off with the D850, very, very slightly better off with the D500. Essentially you are equal in the end for all intensive purposes.

Here are the pros and cons IMHO between the two cameras D500/D850:

D500:
* 10FPS without having to add battery grip, D5 battery, D5 charger
* Less obtrusive shutter sound that doesn't scare wildlife and birds as easily
* Subject appears more magnified in the VF (for an equal subject like discussed above)
* note that actual AF points cover the same area of an equal subject between both cameras so full AF coverage over the VF of the D500 isn't really an advantage.

D850:
* FF, better DR, more pixels but only advantageous if you can use more than the APS-C FOV
* Related to the above, is more flexibility in the field...you have a true 300mm FOV with 300PF but you also have virtually the same pixels and reach as you would with the D500's APS-C (450mm FOV).
* Biggest advantage of D850 I found was if using lenses that put the max aperture at f/8 which limits the AF points to the centre. Even for a reach limited subject, the D850 has the advantage that as the subject gets closer to filling the APS-C FOV, you can still use the centre point on D850 and crop for the ideal composition. But on the D500 to get an AF point on an eye and a pleasing composition that will mean you have to use one of the outer points (that don't work well or at all) OR focus recompose.


Now Z7/D850 is a whole different discussion involving much worse AF-C for moving subjects with Z7, yet somewhat better constancy of AF-S and AF-C focus for subjects not moving much.
EVF vs OVF considerations can be discussed ad nauseam.
Ergonomics can be discussed ad nauseam.
Better button customization on D850 than Z7.
Personally I would take Z7 for everything other than BIF. But because of that limitation, I didn't keep my Z7 as I don't want an expensive camera that can't handle BIF when I need it to. I did justify the lower cost Z50 but couldn't justify the higher cost Z7 at this point in time because of its moving subject AF-C performance.
