To me, the 6D has the best image quality in smaller form factor. I have an eos RP which they say has the same sensor as the 6D II. I find the image quality from my old 6D better than my 5D III and better than my eos RP. If you can live with the small focus point spread (and for me that was a deal breaker), I think it's the best bang for the buck. As much as I understand why used can be a crap shoot, I would think you could find a 6D with a low shutter count in flawless condition for around 700. I think trying to find one new would be more difficult. It's an amazing camera with the best high ISO performance of any Canon body I've personally tried which include the 5D IV, 5D III, Eos RP.

It sounds like you are under the impression that the 6D2 (and RP) has a better newer sensor than the 6D. It doesn't. Its sensor is very much based on the 5D3 sensor which was worse than the 6D in some areas. The 6D2 follows the 5D3 curve in about any quantitative graph measuring ISO or DR.
The 6D competes in some cases with the 5D4, so is a good viable option to consider.
The R, 5D4, 6D, and possibly the 5DS, likely have the best non 1D FF sensor at this time in Canon's line up, at least when looking at high ISO. The 5D4 and R have the best low ISO DR however, the 6D might be somewhat close. The 6D2 is the worst at low ISO DR amongst the 6D, 5D4, 5DS and R.
