#3 is the winner out of this set for me. Nicely done! I might bump the exposure up just a little while watching your highlights and keeping them under control.

Thanks!

Yeah, I had to under expose in the camera pretty heavily because of how the light was hitting the birds but not the background. However, I really like the way they came out with that lighting! You're right though I could probably bump the exposure up a bit.

This was quite an exciting outing for me as there were at least 6 green herons that showed up while I was at this small pond!

Here's my take (and I think that lighthound was onto something): It looks like the light was hitting the background AND the bird, in which case you may have only needed to tweak exposure comp a tiny bit. In situations like these, and with a darker bird like a GH, I usually overexpose just a tiny bit, say +1/3.
