G'day to all!

It was 5:30 PM on an overcast day when this Oryx decided to gallop across the path. I wasn't prepared for the shot as it bounded out of nowhere.
I had pre-set the shutter to 800, Aperture at 5.
And as most animals here are darker, the EC was dialed to +1.
When this fella appeared, I bumped the EC to +1 2/3 -- that's the only thing I could change.
I would love to hear from other members what they would do in such a situation.

I always shoot in "A" and change ISO and EC on the fly. (Actually, I rarely even adjust EC because the files can typically handle being a couple stops off either way, especially in low-contrast, low dynamic range scenes like yours.)

Yes it is a good situation to be in . Just need to have a good technique though, rather than fumble like me.
This was at the Mabula game lodge in South Africa.

Well you sure got the exposure right, other option would have been to be in spot metering mode and with spot point on the Oryx. Also AI servo mode for continuous focus tracking.
Or, since lighting looks overcast and constant you could have had a manual metering setup and been good for this shot too.
That's all I can think of, obviously more than one way to do the shot but as far as being underexposed that is usually not a good thing for noise IMO.

Thank you, Morris I was not sure if I had used the right technique. Hence wanted to to poll the community to check what others would have done.

Horse owner here. When I photograph animals moving I automatically go into shutter priority. I prefer with fast animals like these to go 1/1600 sec and shoot many rapidly.

And I really like the B&W version
