Getting the best exposure is a matter of getting enough but not too much... When highlights are overexposed and blown out you loose the detail there. This can happen both at the moment you take the picture and in the computer later. When working in the field it is important to look carefully at the histogram to make sure you are not loosing detail in the highlights. If you see the graph kicking up at the right edge of the histogram you need to back off the exposure compensation. Often cameras can be set to have overexposed highlights blink as you review them on the LCD, this can be helpful to bring this to your attention. Similarly when processing your raw file you need to be careful to not loose the highlights during your editing changes.
