One for prioritizing the control of depth of field while maximizing image quality, and one for freezing motion.

All three are for video (C1 and C2 for HLG profile "serious" video with two different setups, C3 for run and gun video in standard profile) since my whole camera setup is completely different for video.

I wish the A7R3 had more custom settings banks available (like the Panasonic GH5), I'd have photo settings for:

B&W
Spur of moment grab shots (e.g. auto iso, min 1/400th shutter, C-AF, etc.)
Manual focus setup

I currently have a temp settings override function button set to for the second photo scenario - use the AEL button to switch to AF-C wide zone, Min 1/320th shutter, auto ISO.

I wish we could change mapping of the buttons in different memories modes, would make camera more useful in multiple situations. Don’t suppose it’s possible on MkIII bodies?

you can have them different for photos, videos, and playback

For landscape I have C1 set to do +2/-2 exposure brackets with the 2 sec timer. If I had an rIII I'd have one set to include image stabilization and eye focus

This is what I miss most about the Panasonic GH5... memory banks on the GH5 basically save the entire state of the camera instead of a huge (but sadly, inevitably, incomplete for some users) list of parameters on the A7RIII. Don't know why they just don't save the whole state of the camera, seems like that would have been easier to implement for developers and easier to understand for users... Just set up the camera the way you want, name it (like on the Ricoh GR) and save!
