The history of the EF mount is also the history of Canon's rise to become the industry standard, with which e.g. raw converters have to work their very best. After that come all the other brands. So, is that relevant for how raw converters interpret skin tones? It's very likely that they will work very well with Canon, the market leader, and then comes Sony, no. 2 in full frame.
Lenses also has to be significant for how skin is rendered, and no raw converter won't work with the market leader. -> EF mount lenses. Then comes the second permutation FE mount.
