Looking to grab an A7 for manual focusing purposes. I have no need for a 42 MP body, but I'm wondering if there are other important differences between these two bodies that I'm missing. My primary concerns would be the quality of the EVF and annoying shutter mechanisms. Any input?

Well, the a7rII has better coatings on the EVF (Zeiss T*), and has a silent shutter mode (has issues with fluorescent lights). Both have Electronic Front Curtain Shutter, but can have problems at 1/1000 or faster.

The main advantages of the A7RII are the resolution, slight high ISO improvement, and better AF, especially with Canon EF and A mount lenses. If those don't matter, go with the A7II.

From a MF POV I find the A7r II to be better (I have both)
Advantages of A7rII
1. EVF better in low light (though not as good as A7s) make focussing easier
2. Focus magnification view appears to give more detail
3. Silent shutter when needed (has colour banding issues with fluorescent lights)
4. Hardly any difference in shutter sound but I wouldn't call it annoying as it is quite well damped

Apart from this for manual focussing they are about the same

How does the sound of the shutter compare to the A7 and A7s? I am thinking of going to the A7II from the A7 to get the IBIS because I shoot mostly MF. My main problem with the A7 is the shutter noise, because I often shoot classical concerts.

shutter is quieter if comparing to the A7r vs A7ii and A7rii (sound virtually the same). The silent shutter however, is truly silent, like no noise at all. Full electronic shutter.

i dont own the a7, but do a7r and a7rii, the shutter of the new one is half as loud if I had to guess. Put on electronic first curtain, and it halves the duration of the shutter as well.

STABILIZATION!!!!

It really is a major difference. Handhold a 50mm lens and shoot reasonably at 1/3 of a second... pretty major advantage. I think of the stabilization as affording about 2 additional stops of light - as far as shooting in low light situations go.

I use both an A7II and A7RII with manual focus lenses and agree with Viramanti's post but I think it's a pretty close call. 2 other differences I've noticed: 1) I think the 42MPs of the A7RII tend to stress the capabilities of the older lenses in the corners - with some of my manual focus lenses (mostly standard length primes 50-85mm) the corners on the A7II seem better than on the A7RII (but who knows - it could just be how the adapters are sitting on each mount, etc.) and 2) high ISOs on the A7RII seem better, amazingly enough. I don't think you would go wrong with either choice but the A7II is substantially less expensive.

I don't know how the 7ii does in this regard, but the 7rii's bsi sensor has gotten rid of color cast issues that plagued the original 7r.

The major advantage with the A7R2, in my opinion, is the IBIS stabilization. Every piece of legacy glass now has the advantage of in-camera stabilization.

It sounds roughly similar but the A7II might be slightly more quiet. I just upgraded myself from the A7 to an A7II. The IBIS is very helpful. I'm routinely getting 2.5 to 3 stops of stabilization. Also, if you do use a few AF lenses, the AF is slightly better compared to the A7 but not as good as the A7RII.

The A7 II is also stabilized.

As to the note about AF, especially with Canon lenses: AF itself is very similar between the two with Canon glass. The only major difference is that the A7R II has wider coverage of PDAF points. The A7 II's are in the center 50% of the frame while the A7R II's cover most of the frame.
