Actually, one doesn't need a very fast FPS for that......even 3FPS is enough. But one needs to fire in the right moment 1-3 shot bursts.
BTW, this kind of shots is not an easy fare for 1DX either.
Long ago we had something called 'anticipation'; no motor drives, and one shot to get it right, and those days were a very good teacher. Buying wise; for obvious reasons, has always been about feel and my aversion to certain designs, push-pull but one of a few.
So far I'm liking the 7D's heft and it's bells-n-whistles, but it's AF; those black rectangles, and sad to say it's 18MP sensor really aren't floating my boat. There is more to discover, experiment with, but I find it's IQ very close, just ever so slightly above the 50D; both requiring a bit more PP than my 40D, the 1DMk2N require. It's saving grace are the images Tony has pull-off with it in-hand and use of the NR software he recommended which is fantastic for my purposes.
I'm really torn between the heft; which I love, and awkwardness of my physicality, and the lightness yet bulk of the 40D. The 6D felt fantastic in-hand, much like my A-1 did so long ago; said 40D does today. I suppose my interest in the T6s is simply pointed at how good it's sensor performs and where Canon might be headed. I can see myself quite happy with the 40D and 6D for quite some time unless the wear on the 40D ends it's life, that's when/where a T6s like body might play a role.
As for the pijuns and their flying about, that level of imaging is beyond my skill set let alone my physical. Surfers, motocross and racing imaging seem much easier, as you can often position self, anticipate, for similar recurring events and their locations/lighting. I'm afraid I don't swing, move around much, enough to capture said pijun action; perched pijuns are probably more my speed.
Once out and about this will sort itself and it will be in the doing/effort that success will be found, not necessarily in the image capturing. A good flying pijun is my goal, hand-held or via Gimbal if possible 
If you would humor me, when pijun testing is completed, might you point those steely quick eyes on a non action subject so as to demonstrate the T6s's resolving powers on say garden/flower fare, etc. for that is where my major interest is with this new sensor.
Can't wait to see more BIF, how about one with the T6s and your fishy fifteen
