A super cool composition, I really like the shape of the clouds. I like #1, but I do agree with Jason though that the blown out clouds hurts what could have been a super shot. Checking your histogram for blown highlights is something you should do every time you set up for a new composition.
As for the shots, to me, your #1 shot is the best, both #2 and 3 look soft. Perhaps when you edited them you forgot the final sharpening for the web?
One way to try and save the blown highlights in the clouds now is in Photoshop, select the blown out areas with the Color Range tool, feather the selection, make a layer mask. Then on the bottom layer go to Levels Adjust, and adjust the slider for the Output Levels: at the bottom from 255 to say 245 or so. You will see the whites in those areas will get a little darker and start to match the rest of the whites in the clouds.
