As people always say, sunset is the best time to shoot. For the desert, this really can't be understated. There aren't many good photo opportunities under the bright sun, as shadows are extremely harsh.
In the fall, you will have a perfect view of the Milky Way. Use it to your advantage if you are interested. It is incredibly dark out there, and you should be able to get amazing photos of it.
I don't know if you already have a plan for Lake Powell, but if you can kayak it, do so. There are tons of nooks in the canyon walls that are great for bouncing light. Morning would be opportune for that.
IMO the way to go about this, is to take all your photos in the Golden Hour. Take long exposures if you can, because it really is stunning up there.

Don't be afraid of the dark, if it is because of wildlife. Your chance of having an encounter with it is next to nothing. I've lived here for years, gone out and shot the Milky Way in the middle of the desert, and at most, I've seen a Coyote. It was so scared that when I shined the flashlight at it, it wimpered and ran away very fast.
Spiders aren't a very prominent thing outside of rivers and whatnot. I've never seen a rattlesnake either. Don't let animals prevent you from getting shots. Just always bring a flashlight and a GPS.
You will certainly miss the best shots if you aren't out at those times.
