Any advice on good de-fishing software? I use LR, but it doesn't do well (if any) at interpolating the corners/edges, which become excessively soft when stretching in straightening.
In general, you won't find the corner will do well with defishing software. Most of the time, you'll have to crop, yielding a significantly smaller FoV. It's the nature of the beast considering fisheye lenses tend to compress a lot of data into the corners.
As for defish software, fisheye hemi is pretty good for some uses. It doesn't work well in all situations. It mostly faltered when the camera was close to the camera, or the fishy effect was very pronounced.
You can use PTGui (Paid) or Hugin (free) to defish your images. Both programs have similar GUIs. PTGui is a little more user friendly, but Hugin is free. The big difference is that Hugin uses Panorama Tools, whereas PTGui used to use PT, but has since been rewritten to be stand alone (though, apparently you can still use PTGui as a front end for Panorama Tools).
Here's an example of a photo I took with a fisheye lens that has been defished with PTGui or Hugin (can't remember off the top of my head, but they both perform a similar function). You'll see the original fisheye photo, the defished photo in rectilinear projection at maximum resolution and a crop from the 2nd image.:
